corned beef and cabbage recipe
corned beef and cabbage recipe
- 1 medium onion, cut into wedges
- 4 potatoes, peeled and chopped
- 1 pound baby carrots
- 3 cups of water
- 3 garlic cloves, minced
- 1 bay leaf
- 2 tablespoons of sugar
- 2 tablespoons of cider vinegar
- 1/2 teaspoon pepper
- 1 (3 pound) corned beef brisket with spice packet, cut in half
- 1 small head cabbage
Place the corned beef, allspice, pepper, bay leaves & salt into large pot along with 3-quarts of water. Cover and set over high heat. Bring to a boil, decrease the heat to low and cook, at a low simmer for 2 1/2 hours.
After that add the carrots, potatoes, onions and celery. Return to a simmer and cook uncovered for 15 minutes. After 15 minutes, add the cabbage and cook for an additional 15-20 minutes until the potatoes and cabbage are tender. Remove the bay leaves and serve immediately.
